So this all but confirms Premonition, Typhoon, and Achilles which of course makes me quite happy. The other question is will it just be hi res versions of those ships or will there also be new 25th century skins.

In fairness, "annoyingly Sovereign-like" defines a lot of beta canon and fan-made ships of the period, including stuff like the Luna (what if the Nebula was a sov - Ortiz's Luna refit does a really herculean job of toning it down) and Odyssey (what if the Galaxy was a sov), so it's never really stopped STO's art team

The fans and games set near or post Nemesis seem to have a hard on for the Sovy - despite Cryptic going out of their way to make the Leg sovy astonishingly boring xD

It's not a bad ship - it's just boring

I'm not demanding they make it 5/3 - just... unique in some way

Some unique seating - some unique typing - some clever turn rate or console slot modification

Like something that makes it stand out :P

The problem is honestly 5/3 would make it stand out. Every single version of the Sovereign in STO is a 4/4 cruiser while you have 5/3 Galaxy classes which is kind of funny when you remember the entire point of the Sovereign class was as a more combat oriented starship.

The entire point of the Sovereign was to give the TNG movies their version of the Connie refit, tbh. A lot of fanon was brought in to fill blanks that doesn't really mesh with how even in the heavily action oriented TNG movies its official missions were mainly diplomacy (and thankfully people told Ron Moore that his idea for the borg fight in FC was stupid)

I mean, the connie refit spent most of it's time crashing - blowing up - or falling apart so...
