Welcome back everyone, your regularly scheduled food thinks will be returning. Made some bacon jam today for tomorrow. Rich, mildly sweet, thick with perfectly crisp chunks of bacon and perfectly golden onions. It’s gonna go great with the chorizo stuffed into puff pastry, poached eggs and melted cheese

Bacon jam? How does that work, you have cut up pieces of bacon in jam?

Here’s a recipe! But it’s basically onions fried until soft, mixed with bacon and brown sugar to make a savory/sweet jam

Candied umami inside sweet fruit. Savory, salty, almost saccharine with a medley of textures and flavors. Sign me up.
