The one in the middle looks a bit like Gandolf looking downward with glowing eyes. There’s a catlike face jutting out at the base of the first “pillar”. Looks of objects to pick out, could look at that for hours.

Do they know the chemical makeup of that formation or is it the usual “gas and dust” assessment?

That's part of why JWST is looking at it, I would think. We can tell a lot from spectra and it can gather more spectral data.

Most of it is just hydrogen, naturally.
