It’ll work fine without it, you’ll just have the important display notification pop up when you power your phone on.

Yes it’s for chip transfer from old screen to the new one. You sold the chip on that parts and sold the 6 pin to the new screen you have the place to sold it too and then you will not have screen replaced message

It's not a requirement. If you don't know how to use it, throw it away.
