Biscuits & Gravy: a winner! Food
Posted on the sub awhile back about the best biscuits and gravy in town. Well, we have a champion everyone.
It’s Hey Y’all food truck off Barger. Give it a shot.
FYI The photo is just the half order. Sausage-y, pepper-y goodness.

I don’t know. I got served some very well seasoned gravy at Morning Glory the one time I went there years ago.
Unfortunately, that seasoning was “frat-boy trying to show off his culinary skills for his new girlfriend” levels of italian seasoning and a distinct absence of salt.

Crazy, I was just at Morning Glory a few weeks ago and the mushroom gravy tasted like someone had dumped an entire salt shaker into it. Feast or famine I guess!

Yeah I was gonna say I've had it a couple of times there and it seemed a bit overly salty, like a smoker with no un-responsive taste buds was making it.

Being vegan, isn't it also made with nutritional yeast? (which to me always seems salty)

You can always add salt and pepper at the table. I prefer more pepper than salt. For my homemade gravy I use a salt substitute like Spike.

Have you seen the video from JOLLY where they feed Biscuits & Gravy to British students ? They don’t like the look of scones covered in a lumpy white sauce.

I did! And if I remember correctly they were pretty much in love with it all after they’d had some.
Our white gravy really throws them off. I’ve seen a few videos where British people try them, they really expect gravy to be brown and scones have to be dry and flavorless.

Yeah, they don’t expect a savory étouffée of creamy sawmill gravy with minced pork and sage nappe over a buttermilk scone

B&G is easy to make, but hard to "perfect" since every person's palate is different. Some like the sausage broken down into small pieces a'la SOS style, some like the pictured medium chunky with extra pepper, etc.
I'd be curious to see a poll on this.
Think about it. Have you ever frequented a breakfast place with multiple line cooks, or a place that had high turnover in their kitchen? Did their B&G change often too? If nothing ever changed, it was probably because they served reheated Chef Mate canned gravy, which is what every Dari Mart uses. (Chef Mate isn't bad, definitely not great.)

I add generous doses of smoked paprika and cayenne in the gravy. Not sure if anywhere in town does the same? I like it spicy and smoky.

Hot Honey at Oakshire finishes most of their dishes with a shake of smoked paprika and their b&g is great, particularly their shiitake gravy.

My wife’s been getting some biscuits and gravy from Wandering Goat. I think they’re vegan and have mushroom gravy. They are good and filling.

My favorite for sure
What I do is get one of thier open face biscuit sandwiches and then a side of gravy it’s fucking amazing
Thier hot sauce is dope too

I have to agree! had the country fried steak with biscuits and gravy at Hey Y’all this morning and I don’t know why I waited so long to try this! the batter on the steak was crispy and the biscuit was perfect. Best seasoned gravy in town!

People pay to eat out for foods that they don't know how to or don't want to cook at home. Because of that even mediocre options for styles like Southern cooking can be popular. When it comes to country fried steak, that's originally and more of a specialty from Texas and in turn Oklahoma. Depending on who you ask that could still be the South, but to many others it's not. The whole biscuits and gravy thing did come from the South, though.

Got lucky since my MIL is from the south. I've been blessed many times with great country gravy. She also makes bomb chocolate gravy, too, for biscuits.

Pro tip: grab some morels from the Saturday market and make your sausage gravy with that.

One day I struck gold at Creswell Bakery. Apparently they don't normally do a B&G, but they did the day I went in. It has forever set the bar for me. I don't think that B&G will ever be topped as the best.

So would there be enough demand for biscuits and gravy to have a food cart that sells it exclusively? I have some ideas concerning biscuit bowls and exotic meat gravy.

How hard is it to season flour?
I’m asking for a real reason. Fried foods here have zero flavor. Biscuits and gravy is the same. It’s so bland. Fried chicken? Bland. I know you can’t be KFC with their spice blend. But? Salt and pepper? Paprika? Is it REALLY that expensive or time consuming? Is it against the law to put extra salt and pepper, paprika, an herb into the flour?
Or is it just that the person making it just doesn’t give a damn?
Any cooks/Chefs out there care to comment?
Seriously, if I wanted half assed spiced food? I’d do it myself. Which I end I doing when I eat pizza. Par cooked mushrooms on pizza are a must for me. If I see dried out over cooked mushrooms on a pizza? I never eat there again.
And THAT is why I won’t open a restaurant. Because my cooking sucks. I want to go out and get flavorful food, then discover the cook isn’t any better than me.

Dangit, you're making me so envious. I love biscuits and gravy so, so much. And I really miss the convenience of being able to go to just about any convenience store in the area and pick some up for cheap.
But I'm vegan now so basically if I want biscuits and gravy I gotta make it myself. 🤷
