First try vs second try with sourdough. Can’t wait for the third!

First bake I think I under-proofed and under kneaded (I tried to get it all done in one day). Second try, I took two days, not including feeding my starter the night before. I did a 70% hydration each time. I got a full 8 hour proof and folded/stretched more, put in the fridge over night and got it back to room temp before baking. I realized I was also adding straight starter and not making an actual leaven, so I will change that. Any advice on what else I should do next/change?

Looks great! Adding mixed seeds to the proofing basket gives the bread a nice taste, texture, and look once cooked. You could also try increasing the hydration a little. What flour are you using? Try adding a small amount of 8 grain or wholemeal and you may find it works out slightly different.
