The top post TL;DR: It goes back further than maritime dining. This was a defensive pose too keep people from stealing your food. Since it was common practice with lower classes and the poor, the upper classes sought to separate themselves from the hostile practice.
Or you could think about it for three seconds and realize that something as simple and common as putting your elbows on the table didn't have to be "invented". Sailors didn't invent it any more than miners invented nose-picking to clear out coal dust. It's comfortable, people have rested on shit since the goddamn dawn of man.
